We’re always looking for new ways to add cheesecake to our favorite dessert recipes. The tangy sweetness is simply addictive and we can’t get enough of it! While we can happily eat plain cheesecake with a fork all day long, we also love experimenting with different flavors to compliment it. Strawberry and lemon is a classic flavor combination where something we thought was perfect in itself suddenly looks even better. Sure, but like cheesecake, it’s best served cold. In fact, we still refrigerate them slightly before trying to bite into them.

We think strawberry jam goes well with lemon sandwich cookies, but you can always experiment with different types of jam. If you already have a ton of jam in your freezer, making cheesecake cupcakes in different flavors can be a fun experiment.

What kind of sandwich cookies should I use?

In the photos and video, we use Lemon Oreo Cookies as our cookie base. We found it offered the best combination of flavors. Lemons paired with strawberries are a winner! You can also use vanilla Oreos (or their off-brand generic Oreos) or even regular Oreos.   • 18 Lemon Sandwich Cookies
  • 16 ounce cream cheese
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • 2 big egg
  • 1/2 cup sour cream
  • 1 pinch Salt
  • 1/2 cup Strawberry jam

  • Preheat oven to 325 degrees Fahrenheit. Line muffin tins with cupcake liners. Place a lemon sandwich cookie on the bottom of each.

  • In a large bowl, whisk together cream cheese and sugar until smooth. Add vanilla extract, eggs, sour cream and salt. Continue beating until well combined.

  • Pour about 2 tablespoons cheesecake batter into each muffin cup, filling ¾ full.

  • Microwave the strawberry puree for 20 seconds and stir. Put a small teaspoon of hot jam in each cupcake. Gently swirl the jam into the cheesecake mixture with a toothpick or butter knife.

  • Bake in the preheated oven for 40-45 minutes, until the filling is set. Cool completely in the tin before removing. Store in the refrigerator.
