Raw Chocolate Ganache

  • 1 cup heavy cream
  • 2 cup chocolate chips milk or semisweet

waffle batter

  • 1/2 cup salted butter soften
  • 3/4 cup granulated sugar
  • 1 cup cheese
  • 1 big egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cup all purpose flour
  • 2 teaspoon baking powder

  • 1 pound strawberries or raspberries Elective

  • To make the ganache: Place 1 cup heavy cream in a small saucepan and bring to a simmer over medium heat. When it comes to a boil, stir in the chocolate chips until smooth. Transfer to the refrigerator to chill until the consistency of a spoon is reached, about 1 hour. Once cooled, beat the mixture with a hand mixer until soft peaks are reached. The ganache will harden when you put it back in the fridge.

  • Make the waffle batter: Using a hand mixer, beat together the butter and sugar until creamy, about 2 minutes. Add buttermilk, eggs, and vanilla extract and mix well. Add the flour and baking powder and mix on low speed until just combined, scraping the sides and bottom of the bowl to make sure everything is incorporated.

  • Preheat Belgian waffle maker. Spoon heaping 2/3 cup batter onto waffle iron. Cook one waffle at a time. Transfer cooked waffles to a wire rack to cool completely.

  • To assemble the cake: Layer the cake with at least 4 waffles, frosting between each layer with whipped ganache. Garnish with fresh berries.
