This recipe calls for about 2 cups of grated zucchini, which you can get from about 2 store-bought pumpkins. If you have some great varieties from the garden, feel free to use them too. Just make sure to remove the skin and seeds first.

That said, if you don’t have any treats in the house that don’t like pumpkin, you can definitely use a larger-sized grate.

You can easily turn this recipe into delicious zucchini bread! Just use a standard loaf pan. Make sure to grease the pan so it doesn’t stick, then bake in a preheated 350°F oven for 60-70 minutes, until a toothpick inserted in the center comes out clean.

Notes on Cooking Time and Temperature:

An important step in this recipe is to reduce the temperature from 450°F to 350°F after 5 minutes. Don’t skip this step! If you keep cooking at that high, you’ll end up with a burnt mess. Set a timer so you don’t forget!
