Spaghetti Carbonara is one of those classic pasta dishes that is straight up comfort food. Plus, bacon. correct? For some reason, I have many friends who are a little intimidated by the idea of ​​putting raw eggs in pasta. While the eggs are definitely cooked by the heat of the pasta in a traditional carbonara, they’re a bit of a concern. And friends and family with egg allergies! I decided to come up with an eggless version of pasta carbonara so everyone at my table could enjoy this delicious meal.

- 1 pound Spaghetti
- 3 tablespoon butter
- 2 clove garlic minced
- 1/2 teaspoon Salt
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley

Place the sliced ​​bacon in a cold skillet over medium-high heat. Cook bacon, stirring occasionally, until crisp, about 10 minutes. Remove bacon cubes from pan and grease, and drain on a paper towel-lined plate.

Meanwhile, cook pasta according to package directions.

Remove most of the bacon grease from the skillet, leaving about 1 TB in the pan. Reheat the pan, add the butter, and let it melt. Add garlic and saute 1 minute.

Add salt and heavy cream. Add the cooked and drained spaghetti to the skillet and toss to coat. Stir in Parmesan cheese.
