    There are a few different ways to stuff your chicken. You can make it into a butterfly shape (slice lengthwise and fold into butterfly wings). You can pound it very thin, with a meat mallet, or even a rolling pin. You can also cut a small pocket inside.

    Use a toothpick to secure the chicken and help keep all the delicious filling inside. Run a toothpick vertically through the chicken to pinch the chicken together. Just be sure to remove the toothpick before serving.

Fajita Stuffed Chicken with Lime Slices in a Skillet

  • 2 tablespoon olive oil Divided into
  • 1/2 small white onion diced
  • 1 big red bell pepper diced
  • 2 big mushroom diced
  • 1 clove garlic minced
  • 4 big chicken breast
  • 1 cup shredded pepper jack cheese
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon crushed red pepper flakes Elective
  • 1 tablespoon butter
  • 2 tablespoon lime juice
  • 2 tablespoon fresh chopped cilantro for decoration

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add onions, bell peppers and mushrooms. Saute until the vegetables are tender, about 5 to 7 minutes. Add the garlic during the last 1 minute of cooking. Remove from pan to a small bowl and set aside.

  • Pound chicken breasts into thin slices, or pound chicken breasts into butterflies. Pour vegetable mixture into center. Sprinkle with cheese. Fold the chicken breast over so the filling is inside. Secure with a toothpick if desired.

  • In a small bowl combine cumin, paprika, onion powder, salt, and red pepper flakes (if using). Sprinkle over chicken breasts.

  • Wipe out the skillet you used for the vegetables and return to medium-high heat. Add remaining 1 tablespoon olive oil to pan with butter. Add the chicken breasts and cook 5-7 minutes per side, or until the internal temperature of the chicken reaches 165°F.

  • Drizzle with lime juice and garnish with fresh chopped cilantro (optional) before serving.

Baking Instructions: In addition to cooking stuffed chicken in a skillet on the stovetop, you can also cook it in the oven. Place stuffed chicken in a lightly greased 9×13 pan. Bake in a 400 degree oven for about 30 minutes, until the chicken reaches an internal temperature of 165 degrees.
