Flourless Chocolate Cake is a decadent and rich dessert with something for everyone. No need to adjust the recipe for a gluten-free diet, this is a popular dessert for food lovers. Don’t be fooled by its simple appearance. It’s only about an inch thick and is usually dusted with powdered sugar and berries; but this dense cake is packed with rich flavor.

Flourless Chocolate Cake is also known by its Italian name, Torta Caprese. There are many stories about its origin, but we like the meaning behind such a “lucky mistake”. It is said that a baker forgot to add flour to a cake ordered by a few tourists. As a result, the tourists couldn’t put it down and it became a delicacy!   • Is Flourless Chocolate Cake Gluten Free?

    Yes! Flourless Chocolate Cake contains no gluten products and is therefore suitable for gluten-free diets. While this cake wasn’t originally designed to cater to celiac or gluten-free diets, it has become a popular choice for both.

  • What kind of cream should I use for the ganache?

    The higher the fat content of the cream, the more stable the ganache. In your grocery store, you’ll most likely see both heavy cream and whipped cream. Heavy cream has a slightly higher fat content than whipping cream, but both can be used for ganache. Technically, you could also use whipped cream or sour cream, but they make for a less stable ganache.

  • Which cocoa powder should I use?

    This recipe works best with Dutch Process cocoa powder. However, regular unsweetened cocoa powder will work just as well. Use Dutch processing for best results. Cocoa powder varies in quality, so we recommend staying away from cheap generic brands as they tend to be of the lowest quality when it comes to chocolate.

Flourless Chocolate Cake Topped with Berries, Sliced

Flourless Chocolate Cake is rich, rich, fudgy and super easy to make. Here’s a classic brownie recipe that also happens to be gluten-free.

  • 6 ounce semisweet chocolate chips
  • 1/2 cup salted butter
  • 3/4 cup granulated sugar
  • 1/2 cup Unsweetened Dutch Process Cocoa Powder
  • 3 big egg
  • 1 teaspoon vanilla extract

Ganache

  • 1 cup semisweet chocolate chips
  • 1/2 cup heavy cream

instruct

  • Preheat oven to 375 degrees and lightly grease an 8 or 9 inch round cake pan. Line the bottom with parchment paper.

  • Place chocolate chips and butter in a microwave-safe mixing bowl. Microwave for 30 seconds at a time, stirring in between, until everything is melted and smooth.

  • Pour in the sugar, cocoa powder, eggs and vanilla. Beat together using a hand mixer until fully combined. Do not over mix. Scrape the sides and bottom of the bowl to make sure everything is mixed.

  • Pour into prepared cake pan. Bake in preheated oven for 25 minutes.

  • Cool in pan for 5 minutes. Run a knife around the edges to loosen, then invert the cake onto a serving platter or cake stand. Let cool completely.

  • Place the chocolate chips in a mixing bowl to make the ganache. Heat heavy cream in microwave until boiling, about 45 seconds.

  • Pour hot cream over chocolate chips. Let stand 2 minutes, then blend until smooth.

  • Spread the ganache over the top of the cake. Let cool before slicing and serving.
