pancakes. That’s right, pancakes. They’re like a perfect combination of donuts and pancakes.

Are you ready for crazy good recipes? You might look at the ingredients and think to yourself, “Hey, this looks like a buttermilk pancake.” I thought so too. Let me tell you, these are a far cry from buttermilk pancakes. These babies are deep fried, crispy on the outside and light and airy on the inside. It’s like some kind of donut pancake and it’s delicious.

Fun fact: This recipe is based on a classic Russian breakfast called Oladi. Our Russian friends apparently served these with jam and sour cream. We love ours with fresh berries and sour cream. Now, you might be a little skeptical about sour cream. Trust me on this. Russian sour cream is slightly different than American sour cream (more fat), but it goes well with almost everything. They love the stuff because the sour cream is delicious. You really have to try it with sour cream. real.

  • 1 1/4 cup all purpose flour
  • 2 tablespoon sugar
  • 2 teaspoon baking powder
  • 1/2 teaspoon Salt
  • 2 big egg
  • 2 cup cheese
  • fried vegetable or canola
  • Serve with sour cream and fresh berries

  • In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.

  • Pour in the eggs and buttermilk and mix until the batter is mostly smooth.

  • Heat a skillet over medium-high heat. Pour in enough oil to just cover the bottom of the pan. Let the oil heat up. You may need to adjust and re-adjust the temperature of the heat source as it cooks, so make sure those beautiful pancakes stay golden brown.

  • Working in small batches of 3 to 4, pour the batter into the hot skillet about 1 tablespoon at a time. Fry until golden brown, flip and fry the other side until golden brown.

  • Transfer the fried crepes to a plate lined with paper towels. Serve hot with jam, sour cream, or fresh berries.
