We’re known for our three-tier cakes from scratch, and this newest addition is no exception. People are obsessed with the most amazing chocolate cakes and have recently started munching on the most amazing white cakes. It’s time to party in style with this Funfetti Birthday Cake. It’s moist, flavorful, and will brighten anyone’s day with rainbow sprinkles. This has got to be one of the happiest cakes we’ve ever made, and we dare you to try and eat this with a wrinkled brow!

Lined pot:

For this particular cake, we highly recommend lining the bottom of the cake pan with parchment paper. This will ensure that your cake will come out of the pan in one piece. We also used butter and nonstick cooking spray to grease the pan, both worked great.

Would this recipe work for cupcakes?

Why can! They are baked at 325 degrees for 20-22 minutes and this recipe makes about 36 cupcakes.

Can I make this recipe to only have 2 layers?

Yes you can, you need to divide the recipe by 2/3. But no, I won’t do the math for you. I really believe that the best cakes with the ideal frosting to cake ratio have to be 3 layers.

Can I use a different size pan?

Of course you are welcome to try, but you will need to adjust the cooking time and pay attention to the filling of the pot. This recipe is written for a standard size 9-inch round. A three-layer cake yields the ideal cake-to-icing ratio.

Can I use a different frosting?

Of course you can! Feel free to frost this cake with your favorite icing.

gluten free:

Use gluten-free flour at your own risk. Not all gluten-free flours are created equal, and most are not a direct replacement for all-purpose flour. We did not test any gluten-free flours in this recipe.

Do I have to sprinkle the outside with sprinkles?

No! You can decorate the cake however you want.

Can I sprinkle some powdered sugar on top of the frosting for a funfetti frosting?

Yes! Once your frosting is ready, just lightly fold in your sprinkles. This will prevent the color of the sprinkles from bleeding into the frosting.

Can I use non-pareil sprinklers?

No, I don’t recommend it as they will fade and won’t give the desired funfetti cake effect.

How do I know when the cake is ready?

Do not overbake this cake. Overbaking a white or vanilla cake is the fastest way to dry it out. You can test the cake for doneness by inserting a toothpick into the center. If it comes out clean, your cake is done. I prefer to tap the top of the cake. I can tell if the cake is done by seeing if it wobbles. If it wobbles, there is still liquid in between.

How to decorate my cake like the picture?

In the photos and videos, we sprinkled the cake with sprinkles. This requires almost 2 cups of extra sprinkles. Warning: it can get pretty messy, so have a vacuum or broom ready. It’s a beautiful result, but it can get a little crazy.
