Do you have breakfast for dinner? Because we eat breakfast and dinner all the time. I like to keep things interesting, and I’m always changing things up. This recipe is the product of my kitchen experiments. Back in 2013, I decided to do something different by making waffles. And thus my Greek Yogurt Waffles were born. I feel so much better when I slather syrup on my waffles because I know there is a redeeming quality somewhere.

I already know what one of your problems is. And, yes, you can make these with whole wheat flour. They won’t be as fluffy, but they definitely work. This is a great way to consume whole grains.

Now, I’d be remiss if I didn’t mention that I have the most amazing syrup recipe your taste buds have ever experienced. I call it liquid cinnamon roll syrup and it’s delicious. My family can never get enough of it and we prefer it to any other syrup you may offer us. This is untrue. And it’s dangerous, very dangerous. Syrup will never be the same if you choose to experiment. Serve it with some candied bacon and I might knock on your door for a spot at your table.

raw material

  • 2 big egg
  • 1 3/4 cup milk
  • 1/2 cup Plain Greek Yogurt
  • 1 tablespoon Honey
  • 1 tablespoon + 2 tsp baking powder
  • 1/4 teaspoon Salt
  • 2 cup all purpose flour

instruct

  • In a medium bowl, whisk together eggs, milk, yogurt, and honey. Stir for at least a few minutes until it’s well combined and foamy.

  • Add baking powder, salt and flour and mix well.

  • Cook on a heated waffle iron until golden brown.

***Leftover batter can be stored in an airtight container in the refrigerator for about a week.
