Is cucumber peel edible?

Yes! Cucumber peels are high in dietary fiber, which is always good for you. If you find the rind to be tough or bitter, you can always try peeling only half of the rind, leaving streaks of the rind along the length of the cucumber. Not only is this pretty, it also softens the effects of any hard or bitter skin while still allowing you to benefit from the extra fiber.

  • 2 english cucumber diced
  • 1 pint cherry tomatoes stationed
  • 1 Shallot diced
  • 2 tablespoon Extra virgin olive oil
  • 2 tablespoon lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon granulated sugar or honey
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 tablespoon fresh dill minced


  • In a large bowl, toss together cucumbers, tomatoes, and onions.

  • In a small bowl, whisk together the olive oil, lemon juice, vinegar, sugar, salt, pepper, and dill.

  • Pour over cucumbers and toss to coat.

  • Cover and refrigerate for at least 1 hour before serving.
