This healthy tuna stuffed avocado is stuffed with a delicious Southwestern blend of tuna, bell peppers, jalapenos, and cilantro. No need for mayonnaise here! This is the perfect healthy lunch.

We made this recipe several times a week for several months before finally writing this post. We just came up with it one day based on what we had in the kitchen. We fell in love instantly. This is our favorite lunch. We’ve heard that you shouldn’t be eating tuna more than twice a week, so maybe we shouldn’t be doing this every day, but you can bet we definitely want to. Not only is this easy to make, it’s also super healthy.

Bell Pepper Substitute for Tuna Stuffed Avocado:

The red bell peppers in this recipe can easily be replaced with tomatoes. You can even add diced, halved or quartered cherry tomatoes to the recipe.

Spice Grade:

You can omit the jalapeños if you want to control the heat level in this recipe. Jalapenos vary in level of spiciness, so you never know what you’re going to get. If you want to retain some of the heat but just want something with a lower heat, try a less spicy chili like poblano peppers. For more heat, try a spicier chili like a habanero.

Tuna Options:

You can usually buy two types of tuna in the canned goods section of your supermarket: pure white albacore and skipjack/light tuna. Pure white albacore is more expensive and has a lot less “fishy taste”. It has three times the omega-3 fatty acid content. Unfortunately, it also has three times as much mercury, so keep an eye on your total consumption.

Storage Instructions:

Tuna Stuffed Avocado is best eaten fresh. You can store leftovers in an airtight container in the refrigerator for a few days, but be aware that your avocados will turn brown from oxidation.

  • 1 avocado Halving and pitting
  • 1 4.5 oz can tuna, drained
  • ¼ cup diced red bell pepper
  • 1 tablespoon chopped jalapeño
  • 1/4 cup coriander leaves roughly chopped
  • 1 tablespoon lime juice
  • salt and pepper to try

instruct

  • Scoop out some avocados from the pitted area to enlarge the “bowl” area.Place scooped avocados into a medium sized container mixing bowl. Mash with a fork.
  • Add tuna, bell pepper, jalapeño, and cilantro to mixing bowl. Drizzle with lime juice. Stir them together until everything is well combined.

  • Spoon the tuna into the avocado bowl. Season with salt and pepper.
