Creamy Herb Butter Mashed Potatoes are rich, dripping with butter, and can even be made 2 days in a rowtime!

Does mashed potatoes need any introduction? We all know and love mashed potatoes. They’re one side dish that everyone agrees on. Kids love them, adults love them, they’re comforting, warm, and buttery, and…sorry, never mind the drooling here. We’re obviously huge fans and there’s no need to save this recipe just for the holidays. We do it all year round!

Herb Garlic Mashed Potatoes are not only delicious. Did you know they can be made ahead and dressed up before serving? There’s one more thing about mashed potatoes that makes them so addictive. Just before serving, drizzle butter over the tops of the potatoes to give them a delicious look. When you spoon the potatoes, the butter seeps in and creates a creamy, buttery mashed potato that you’ll absolutely love.

  • Can Herb Butter Mashed Potatoes Be Made Ahead?

    Yes, this is one of our favorite mashed potatoes! You can make mashed potatoes up to 2 days in advance. After transferring the potatoes to the baking sheet in step 4, let them cool before covering and refrigerating. When ready to eat, heat potatoes in a 425-degree oven until heated through. It takes about 30 minutes. Then continue with the recipe in step 5.

  • Can I use margarine instead of butter?

    You really need the full fat of real butter in this recipe, and we cannot recommend margarine in place of real creamy butter.

  • Can Mashed Potatoes Be Dairy Free?

    Plant-based dairy alternatives have come a long way in the past few years, with high-quality butter and cream cheese alternatives on the market. Check your vegan/vegetarian section or visit a natural grocery store to find plant-based cream cheese and butter. Make sure to use a stick of plant-based butter, not margarine.

  • 3 pound. Russet Potatoes peeled
  • 4 cup chicken soup
  • 1/2 cup butter Divided into
  • 2 clove garlic minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried fennel
  • 1/2 cup cheese
  • 4 ounce. cream cheese
  • 1 1/2 teaspoon Salt
  • 3 tablespoon chopped chives
  • freshly ground black pepper

  • Cut potatoes into chunks, about 1 inch. Place potato cubes in a large saucepan. Pour the chicken broth over the potatoes and bring to a boil over high heat. Simmer until potatoes are tender, about 15 minutes.

  • Meanwhile, melt 1/4 cup butter in a small saucepan over medium-low heat. Add garlic, basil and fennel and cook for about 1 minute. Pour in buttermilk and heat. on hold.

  • Drain the potatoes. Place the cream cheese in the bottom of a large mixing bowl and place the drained potatoes on top. Give the potatoes a little pulse with a hand mixer before pouring in the buttermilk mixture. Add the salt and beat with a hand mixer until completely smooth.

  • Transfer potatoes to a baking dish. ***At this point you can let the potatoes cool for 30 minutes, cover with plastic wrap and refrigerate until serving time. Then just remove the plastic wrap and heat in a 425 degree oven for about 30 minutes, until warmed through. Continue with the rest of the recipe. ***

  • Melt remaining 1/4 cup butter in a small bowl in the microwave. Sprinkle with chives. Pour the butter over the hot potatoes in the baking dish. Season with freshly ground black pepper. Serve hot.
