Sometimes I do “weird” and “crazy” things like making my own cereal. Here’s the thing, my husband and kids ate a ton of cereal. Like a ridiculous amount. I used to have a walk-in pantry. My good friend and neighbor is a master organizer and we made a deal where she came to organize my pantry and I made her a lemon meringue pie. score, right? Well, I made the pie and here she is, working her magic. In her organization, she discovers just how bad our cereal habits really are. With about 10 open boxes of cereal, our cereal takes up a full 6 feet of shelf space. All sugar and air.

It’s a little awkward, but they love it. So when I do something weird and crazy like making my own healthier cereal, it probably doesn’t seem so weird and crazy anymore. Doing it my way means I know exactly what’s in their cereal bowl and I can boost its nutritional level.

This cereal is more filling than your regular boxed cereal, so you might want to take that into account when pouring yourself a bowl. A cup of oatmeal is enough to fill me up easily. Keep this in mind when pouring yourself a bowl.

It will keep for about a week in an airtight container. Make sure it’s completely cooled before putting it in the container though, or you’ll be bringing some moisture into the container, which won’t be good. I’ve been known to store it in a tupperware container, but a plastic bag would work too.

Even though I love this cereal, I rarely have a bowl of it in the morning. It’s a delicious dessert in the morning that’s actually rich and filling. I never thought I’d get it from cereal! My kids actually had fun with it. This is a fun afternoon activity.

raw material

  • 1/2 cup coconut oil
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground flaxseed
  • 3 tablespoon water
  • 1 1/4 cup whole wheat flour
  • 3/4 cup instant oatmeal
  • 1/4 teaspoon Salt
  • 1/2 teaspoon baking soda
  • 1/2 cup mini chocolate chips


  • Preheat oven to 400 degrees. Line 2 baking sheets and parchment paper.

  • In a large mixing bowl, cream the coconut oil, brown sugar, and vanilla extract with a hand mixer. Add ground flax and water and stir until combined.

  • Add flour, oats, salt and baking soda. Stir until well combined. Stir in the chocolate chips. The mixture is almost crumbly, but sticks together when pressed and shaped.

  • Roll out the dough into teaspoon-sized balls and place on the prepared baking sheet, leaving a little space between each piece. They don’t spread much.

  • Bake in the preheated oven, one sheet at a time, until golden brown, 7 to 10 minutes.

  • Remove from oven and cool completely on a wire rack. Store in an airtight container. Consume with milk or directly.
