Let’s talk about cheese selection. When it comes to nacho cheese sauce, you have a variety of options, all delicious in their own way. Velveeta is a processed American cheese that is the standard choice for making nacho cheese sauce. It will be thicker, smoother and creamier than shredded cheese. You can also use your standard cheddar or other favorite melted cheese, which will make for a thinner, slightly grainy sauce.

  • 2 tablespoon salted butter
  • 2 tablespoon all purpose flour
  • 1 cup milk
  • 8 ounce Cheddar cheese or processed American cheese
  • 1/8 teaspoon chili


  • Melt butter in a skillet over medium-high heat.

  • Stir in flour and paprika and cook 1 to 2 minutes.

  • Stir in the milk and bring to a simmer.

  • Reduce heat to low and add cheese.

  • Stir until cheese is melted.
