We absolutely love these potatoes. They’re neutral enough to go with a variety of entrees and tasty enough to lick your plate clean. These babies are even great as leftovers. Make sure you serve up any delicious butter that leaks into the pan. This is absolutely heaven!

Can I use a different type of mustard?
Not everyone likes Dijon’s rich mustard flavor. You can always substitute classic yellow or spicy brown mustard, although we do like the complex flavors that Dijon brings to this dish.

The ideal way to reheat mashed potatoes is in a 400°F oven until fully heated through. You really want to keep that crunch. However, as we all know, we just pop one in the microwave for 30 seconds to a minute. They are so good, sometimes we just can’t wait for the oven!

- 15 small small red potatoes
- 1/2 cup butter melted
- 3 tablespoon Honey
- 1 tablespoon dijon mustard
- 1/2 teaspoon Salt
- 1/2 teaspoon dried oregano

Preheat oven to 400 degrees. Lightly grease a baking sheet.

Wash the potatoes and place them on the prepared baking sheet. Bake for 30 to 40 minutes, until potatoes can be mashed with a fork. Actual baking time depends on the size of the potatoes. Larger potatoes will take longer.

In a small bowl, whisk melted butter with honey, Dijon mustard, salt, and oregano.

Remove the baking sheet from the oven. Mash each potato with a fork as shown. Pour butter mixture over potatoes. Return to the oven and bake for another 5 to 10 minutes to give it a little time to melt and caramelize slightly into the potatoes.

Serve hot with juice.
