Ice cream cake is one of those classic party desserts we all know and love. If you’re a big fan of birthdays (or any other special occasion!), you know they’re hard to find, and a little pricey. Well, we have some good news for you: making homemade ice cream cakes is easier than you think! Our recipe includes layers of cake, filling, ice cream and some frosting to finish it all off. The hardest part is deciding what flavors you want to pair with! You can also get creative with the size and shape of your cake. While this recipe is not difficult to make, it does require a few steps and some time. We recommend making your own the night before you plan to serve it so it’s ready for an afternoon party!

Troubleshooting: Should I Melt the Ice Cream First?

You don’t need to completely melt your ice cream before starting, but it should be soft enough that you can scoop it out and spread it out on the pan. You don’t want to hurt yourself or break the spoon!

Do Ice Cream Cakes Have Eggs?

Unfortunately for those of you who are allergic to eggs, our cake recipe does contain eggs. You can always try an egg substitute, or you can use your favorite allergy-free cake instead!

Will the ice cream cake melt?

Indeed. If you want to enjoy your meal at an outdoor party or BBQ, we recommend keeping it in the fridge before serving – especially important on a hot summer day!

Storage Instructions:

Once you’ve made your dessert, you should store it in the refrigerator until you’re ready to enjoy it. If you do have any leftovers, you should store them in an airtight freezer-safe container in the refrigerator. They will keep for about a week.

  • 1 9 inches chocolate cake or whatever you want!

Fillings and Toppings

  • 3 cup sweet stuffing Cookies, Candies, Frosting

Buttercream Frosting

  • 3 cup heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract



  • In a large bowl, using a hand mixer or stand mixer, beat together the cream, powdered sugar, and vanilla. Whip until stiff peaks form.

Cake Assembly:

  • Line a 9-inch round cake with plastic wrap. Scoop all 1.5 quarts of ice cream into cake pans. Cover with plastic wrap to smooth or even out ice cream. Freeze for at least 2 hours, preferably overnight.

  • Place cooled 9-inch cake on a serving plate or cake stand.

  • Spoon a small spoonful of cookie dough or other sweet filling evenly over the tops of the cake layers.

  • Remove ice cream pan from freezer and unwrap plastic wrap. Place ice cream on top of cookie dough layer.

  • Spread the frosting over the ice cream layer, then add a small scoop of cookie dough on top to finish. Freeze until firm and serve!



  • 1 cup salted butter, melted
  • 1 cup brown sugar, tightly packed
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 2 1/2 cups all-purpose flour, toasted
  • 2 cups mini chocolate chips
    1. In a large mixing bowl, whisk together melted butter, brown sugar, and granulated sugar. Stir in milk, vanilla extract, and salt. Stir in flour with a rubber spatula until fully combined. Then stir in the chocolate chips.
