If you’re trying to throw together a last-minute meal, this side dish is quick and easy, and it pairs well with grilled or pan-fried chicken over rice. Can I use frozen broccoli florets?

Yes. The average head of broccoli should yield three to four cups of broccoli florets, which is the amount you want to use if substituting frozen broccoli florets.

Very tasty cheesy broccoli spicy?

We needed 1/4 tsp red pepper flakes for a little kick, but it’s not an overly spicy recipe. If you have young children or anyone with an extreme spice intolerance, you can omit this entirely, or substitute a pinch of black pepper.

Cheese Options:

We love the juxtaposition of good sharp cheddar cheese with the brightness of the lemon juice and the bitterness of the broccoli. However, try some of your favorite cheeses! For best results, use something that melts easily, such as mozzarella, provolone, or Gruyere.

Storage and Reheating Instructions:

Cheesy broccoli is best eaten fresh. Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat single servings in the microwave in 30-second increments until heated through.

Cheesy Broccoli in a Sheet Pan

  • 1 to 2 big head broccoli cut into florets
  • 2 tablespoon olive oil
  • 1/2 teaspoon Salt
  • 1 cup shredded cheddar cheese
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon lemon juice

instruct

  • Heat a large, heavy skillet over medium-high heat.

  • Pour in olive oil to cover the bottom of the skillet. Place broccoli florets in a single layer in skillet. Season with salt. Cook without stirring for 5 minutes, until the broccoli is browned on the bottom.

  • Stir in the broccoli and cook undisturbed for another 4 to 5 minutes, until browned on the other side and the broccoli is tender and crisp.

  • Sprinkle with cheese and let melt, bubble and brown. Turn off the heat. Sprinkle with red pepper flakes and drizzle with lemon juice before serving.
