I recently took the trip of a lifetime on a Scandinavian cruise Regal Princess. I was dying of excitement and I got an email inviting me to go. Travel around Northern Europe? Why, yes, please! Cruise to Russia? Yes! It really is a dream trip. It’s certainly not your typical cruise ship, lounging in the pool and lounging on the beach. Princess Cruises offers so much more than that!

A Baltic Sea cruise is a great way to see Northern Europe. We departed from Copenhagen, Denmark and took a boat to Oslo, Norway, then to Berlin, Germany, then Thali, Estonia. Then travel to Russia, overnight in St. Petersburg. We wrapped up our trip in Helsinki, Finland and Stockholm, Sweden, before returning to Copenhagen.You can check out our itinerary here. If a cruise like this isn’t on your bucket list, it should be! It was one of the most incredible experiences of my life. We visited 7 of the most beautiful cities in the world and, of course, experienced some absolutely incredible food. Food is pretty much the entire reason I travel, so you can bet I eat all over Scandinavia.

Over the next few weeks, I’ll be sharing some recipes inspired by my travels.princess has a ton In-flight dining options Their food is very good. It’s made from scratch on board every day, and it’s impressive. Starting off with my recipe sharing, I want to share with you the things I ate the most throughout my entire trip. You might think it’s the peanut butter donuts they serve on board, or the awesome room service pizza, or several amazing pistachio desserts on one ship (because hello! That’s three of my all time favorites kind of thing!), but no…it’s a delicious Key West cooler mocktail. I don’t drink alcohol, but I only like mocktails. When my server recommended this, all I heard was “passion juice” and I was sold. Passion fruit is one of my favorite flavors. When we lived in San Diego, I used to buy big bags of passion fruit juice at the farmers market. This mocktail is all about the passion fruit and it became an instant favorite of mine!

Treat yourself to a Key West Cooler mocktail and relax while enjoying flavors of watermelon, cranberry and passion fruit juice.

  • In a cocktail shaker or glass, shake or stir together passion fruit juice, cranberry juice, and watermelon juice.

  • Rub a wedge of lime over the rim of a highball glass. Sprinkle the sugar on a small plate, then dip the top of the glass in the sugar.

  • Fill a highball glass with ice. Pour juice mixture over ice.

  • Fill the rest of the glass with the lemon-lime soda. Garnish with a lime wedge and serve immediately.
