Lately I’ve been heading to the grocery store without a list. This is very important to me. I am a master planner. My grocery list is usually detailed and organized by location in the store. However, I’ve always felt a lack of inspiration for new recipes. This is an art and cannot be forced. I’ve been heading to the store without a list so I can let the ingredients speak for me and see if inspiration strikes my plate. That’s why shredded lamb is in my grocery cart with all the Gyro’s fixtures.

It wasn’t until I got home that I started planning on turning them into gyroscopes. The result is inspiration on a plate. The lamb meatballs are juicy and flavorful, while the garlic sauce adds punch and acidity. Roll it into a flatbread and you have a plain little sandwich. Wait, did I say less? These are actually quite large and filling. I stuffed myself silly and was happy about it. This is a great way to enjoy ground lamb.

  • 1 pound minced lamb
  • 2 tablespoon chopped fresh parsley
  • 2 tablespoon chopped fresh mint
  • 2 tablespoon chopped fresh cilantro
  • 4 clove garlic broken
  • 2 teaspoon red wine vinegar
  • 1 teaspoon cumin powder
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon Salt
  • 1/4 teaspoon ginger powder
  • 1/4 teaspoon ground cinnamon

Lemon Garlic Sauce

  • 1/2 cup Plain Greek Yogurt
  • 1 lemon juiced (about 1/4 cup)
  • 4 clove minced garlic
  • 1/4 teaspoon Salt

  • 4 flat bread or pita bread
  • 1 cucumber slice
  • 1 tomato slice
  • 1/2 Shallot slice
  • 1/2 cup fresh chopped cilantro


  • Preheat oven to 400 degrees. Lightly grease a 9×13 glass baking dish.

  • In a medium mixing bowl, combine ground lamb, parsley, mint, cilantro, garlic, red wine vinegar, cumin, salt, allspice, red pepper flakes, cinnamon, and ginger. Knead together until fully combined.

  • Shape the meat into 12 balls. Add to prepared pan. Bake until cooked through, about 25 minutes.

  • While the meatballs are baking, make the garlic sauce. In a small mixing bowl, whisk together the Greek yogurt, lemon juice, garlic, and salt until combined.

  • Serve meatballs on pita bread with sliced ​​cucumber, tomato, red onion, fresh cilantro and drizzle with garlic sauce.
