Who knew lasagna and chicken would go so well together? It makes sense, considering how well the Italian-inspired spices, marinara sauce, and mozzarella go well with the tender, succulent chicken. Well, we decided to bring all these flavors together to bring you this chicken lasagna recipe! This dish will please the whole family. You can serve it with salad to keep it low carb. Or, you can serve it with buttery noodles for a cheesy, saucy, carb-heavy finish. We will not judge you in any way! It’s easy, delicious, and the perfect weeknight meal. And, oh, that cheese! We’re big fans and we’re sure you will be too after trying it for yourself!

Can I use store bought Marinara sauce?

Our Stuffed Chicken Lasagna recipe calls for marinara sauce. If you’re in a pinch, you can choose to use store-bought sauces, but we always prefer to make our sauces from scratch! If you have time, try our homemade pasta sauce – we promise it’ll be worth it!

Shredded Mozzarella Cheese:

You’ll notice that our chicken lasagna recipe calls for shredded mozzarella cheese. You can find these pre-packaged items at almost any grocery store these days. However, these types of mozzarella contain an additive that makes the cheese more difficult to melt. Resist the urge to choose the pre-shredded variety and opt for fresh mozzarella that you have to shred yourself. You’ll get really cheesy results every time!

Pan Options:

This recipe makes two servings. If you want to double or triple this recipe (assuming you’re cooking for a large family or want to meal prep), be sure to use a larger dish. A 9×13 baking pan will do, but you can always go bigger if needed.

Egg substitutes:

The eggs in this recipe act as the glue that holds the chicken and cheese lasagna filling together. If you want to skip it, have allergies, or want to cut eggs, there are a few different options:

  • flaxseed and water (vegan!)
  • Mashed Potatoes (or Parsnips!)
  • white sauce
  • heavy cream
  • yogurt

Ricotta cheese substitute:

Picture this: You buy everything to try our Lasagna Stuffed Chicken for yourself. You thought you had all the ingredients, but alas, you forgot the ricotta cheese! Or maybe you want to minimize your use of animal products as much as possible. Here are our favorite ricotta substitutes:

  • cottage cheese
  • cream cheese
  • mascarpone
  • goat cheese
  • Tofu (vegan!)
  • Cheese

How to make Butterfly Chicken:

Like all stuffed chicken breast recipes, this chicken lasagna variation calls for you to butterfly your chicken breasts. If you’ve never done it before and feel intimidated – don’t worry. It’s a very simple process:

  1. Place your chicken on a cutting board. Run your hand over it to hold it, and run a knife through the side of the chicken lengthwise, starting at the thickest part. Make sure not to cut it completely in half.
  2. If you left a bit of the side of the chicken breast, you should now be able to open it up into a butterfly shape.
  3. This step is optional, but to make stuffing the chicken easier, you can cover it with plastic wrap and flatten it with a rolling pin.
