  • 30 ounce canned chickpeas drain and rinse well
  • 1 pint red grapes or cherry tomatoes halve or quarter
  • 1 english cucumber diced
  • 1 Green pepper diced
  • 1 small red onion thin slices
  • 1/2 cup sliced ​​kalamata olives
  • 1/2 cup crumbled feta cheese
  • 2 tablespoon fresh chopped basil
  • 2 tablespoon fresh chopped mint

dressing

  • 2 tablespoon Honey
  • 3 tablespoon Extra virgin olive oil
  • 2 tablespoon lemon juice
  • 2 tablespoon white wine vinegar
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper

  • In a large mixing bowl, stir together chickpeas, tomatoes, cucumbers, bell peppers, red onions, olives, feta, basil, and mint.

  • For the dressing, pour the honey into a microwave-safe mixing bowl. Microwave for 10-15 seconds to liquefy the honey. Stir in olive oil, lemon juice, vinegar, salt, and pepper.

  • Pour the dressing over the chickpea salad. Toss to combine. Refrigerate until ready to serve.
