What is pico de gallo?

Pico de gallo is a fresh salsa. It actually translates as “rooster beak” and got its name from the way people used to eat it: pinch it with your fingers. Sometimes it is also called salsa fresca (fresh salsa).

  • 1/2 cup Orange juice
  • 1/4 cup lime juice
  • 1 tablespoon white vinegar
  • 1 tablespoon Extra virgin olive oil
  • 1 tablespoon chopped jalapeño
  • 4 clove crushed garlic
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 pound flank steak 1 knife

  • 2 cup diced roma tomatoes or quartered cherry tomatoes
  • 1 tablespoon chopped red onion
  • 1 tablespoon fresh chopped cilantro
  • 1 teaspoon chopped jalapeño
  • 2 tablespoon lime juice

  • 1-2 avocado peeled, cored, sliced

  • In a small bowl, whisk together orange juice, lime juice, white vinegar, olive oil, jalapeños, garlic, salt, and pepper.

  • Transfer steaks to a shallow dish. Pour the marinade over the meat. Refrigerate and marinate for 30 to 60 minutes.

  • Meanwhile, combine tomatoes, onion, cilantro, jalapenos, and lime juice in a bowl to make pico de gallo. Stir together and season with salt.

  • Heat a large, heavy skillet over high heat. Cook steaks 4 to 5 minutes per side, or until medium-rare. Turn off the heat and let the steak rest in the skillet for 5 minutes. Remove from pan and slice thinly.

  • If desired, return the steak to the skillet, spoon in the pico de gallo and top with sliced ​​avocado, or serve on its own.
