You can use egg substitutes and plant-based milks in place of buttermilk to make this homemade muffin recipe vegan-friendly. These substitutions should not change the texture or taste of the baked good. good news!
You can also add any vanilla flavored extract. Some ideas include almond, lemon or orange extracts.
A note about baking powder:
If you want your homemade muffins to rise, you need to make sure you don’t leave out the baking powder. It’s one of those ingredients that you may have tried to ignore in the past. There’s nothing worse than having all the ingredients for a recipe, only to find you’re missing one. You might not think a few tablespoons of baking powder are that important, but trust us, they do!
If you’ve added baking powder and your dish still won’t rise, check to see if it’s expired. If not, you may need to add more. Using a hand mixer can also help ensure everything is thoroughly mixed together. Also check your oven temperature while you’re in it – it needs to be hot enough! When the conditions (and hitters) are right, you can’t go wrong.
Troubleshooting: How Do I Make My Muffins Fluffier?
What’s better than fluffy breakfast muffins? not much! If you followed the directions on the recipe card, you should have fluffy results. But if you want to make your hair lighter and more voluminous, we have a helpful tip for you.
Make sure the eggs, butter, and milk are at room temperature before you start mixing. It creates a smoother batter that naturally absorbs air before going into the oven. The trapped air will expand as it bakes, which will make your pastry very puffy.
Can I make these minis?
We love mini breakfast muffins! If mini varieties are more your style, you’re totally free to adapt this recipe to your liking. Follow the steps as directed, but use mini muffin pans instead. You also need to lower the temperature.
Bake at 375°F for 10-12 minutes, or until cooked through. Check that baked goods are ready by inserting a toothpick in the middle. If they come out clean, take them out of the oven.
