Cookie dough holds a special place in my heart. One of the first things I learned to make was chocolate chip cookies. On my day, I have my fair share of raw cookie dough. Now, I know there are some concerns about salmonella and such, so if you’re concerned about that, be sure to check out the instructions in my cookbook for cooking before using flour in a recipe.

Cookie dough sticks are a thing of beauty. Edible cookie dough topped with chocolate? Yes, please! I decided to kick it up a notch by adding a layer of peanut butter cup filling. The results are absolutely remarkable. It’s rich and you only need a small piece, but that doesn’t stop me from eating too much at once. You have been warned!

Cookie Dough Layers

  • 1/2 cup butter soften
  • 3/4 cup brown sugar tightly packed
  • 1/4 teaspoon Salt
  • 1 teaspoon vanilla extract
  • 2 cup all purpose flour
  • 14 ounce. sweetened condensed milk
  • 2 cup mini chocolate chips

Peanut Butter Layer

  • 1 cup Smooth Peanut Butter
  • 1/2 cup powdered sugar

  • 12 ounce milk chocolate chips
  • 1/2 cup heavy cream Elective

  • Spray a 9×9 baking pan with nonstick cooking spray and line with parchment paper.

  • Using a hand mixer in a mixing bowl, combine the butter and brown sugar to create the cookie dough layers. Add salt and herbs. Slowly add the flour and sweetened condensed milk, mixing the two alternately. Add mini chocolate chips. Press dough into prepared baking pan.

  • Using a hand mixer, cream the peanut butter and powdered sugar in a mixing bowl to create the peanut butter layer. Lightly spread peanut butter mixture over cookie dough layer.

  • Pour the chocolate chips into a microwave-safe bowl to create the chocolate layer. For a softer chocolate layer, pour in heavy cream (optional). Microwave 15 second at a time, stirring in between, until chocolate is smooth and melted. Immediately pour over the peanut butter layer, smoothing with a rubber spatula.

  • Refrigerate for 4 hours before slicing and serving.

If you’re concerned about eating raw flour, you can toast the flour before using it in a recipe. Simply place the flour in a pan and toast over medium heat for 3 to 5 minutes. Use the baking flour in the recipe as directed.
