Chicken and dumplings are classic American comfort food. It consists of a chicken and vegetable soup base topped with biscuit dough dumplings. You can find a variety of methods and preparations for making chicken and dumplings, especially the dough for the dumplings themselves.

It’s a simple dough with just a few ingredients. Buttermilk is used to interact with the baking powder to form fluffy dumplings. Put dough in various sizes of boiling liquid for a rustic, home-style twist.

  • How do you make chicken and dumplings from scratch?

    For a true from-scratch chicken and dumpling recipe, you’ll want to use a whole chicken that you’ve already cut into individual pieces (i.e. breast, wings, thighs, drumsticks). Fry it in olive oil at the beginning of the recipe. Once charred, remove them from the pan and continue with the recipe. Since you roasted the chicken and it has a whole chicken in it, you can substitute water for the broth as the chicken itself produces its own broth. You will need to simmer the broth longer, 45 minutes to an hour, to ensure the chicken is cooked through. The downside to using a whole chicken is the need to discard the skin and bones. This, along with searing, adds extra work and cooking time.

    If you want the chicken and dumpling soup base to thicken, you need to do this before adding the dumplings. Take about 1/3 cup of liquid and put it in a bowl. Stir 2 teaspoons of cornstarch into this liquid. Once the mixture is smooth, pour it back into the stockpot and stir. Then, you can make dumplings. The soup base will thicken as the dumplings cook.

  • 1 tablespoon olive oil
  • 3 Celery Ribs slice
  • 3 radish diced
  • 1 white onion diced
  • 3 clove minced garlic
  • 3 Boneless Skinless Chicken Breasts
  • 1 teaspoon Salt
  • 1/2 teaspoon black pepper
  • 8 cup chicken soup

Dumplings

  • 2 cup all purpose flour
  • 3 teaspoon baking powder
  • 1 teaspoon Salt
  • 1 cup cheese

instruct

  • Heat a large Dutch oven over medium-high heat. Add olive oil and heat for 1 minute. Add celery, carrots, and onion and sauté 5 minutes, or until onion is soft and translucent. Add garlic and cook 1 minute more.

  • Add chicken breasts and season with salt and pepper. Pour in the chicken broth. Bring to a boil and boil for 20 minutes, or until the chicken is cooked through and shreds easily with a fork. Shred chicken directly in the pot, or remove to a cutting board, shred, and return to soup.

  • Whisk together flour, baking powder, and salt in a mixing bowl to make dumplings. Slowly pour in the buttermilk and stir to combine. A spoonful drops directly into the soup. Cover and simmer for 20 minutes. Serve hot.
