Potato salad is an essential part of any family barbecue. As kids, we never really understood the magic of potato salad. Cold potatoes with mayonnaise? no thanks. We should have known better when the adults never let us add it to our plates, but they always went back for seconds on their own. When we finally got around to trying it for the first time, we had wasted too many years eating potato salad! Oh well, we are definitely making up for lost time now! However, our true love for potato salad started not with the mayonnaise we grew up with, but with German potato salad. German Potato Salad usually refers to the Southern German flavor, and we all love it. Forgo the mayonnaise and enjoy this Potato Salad Dressed in Dijon Vinaigrette!

German Potato Salad vs: American Potato Salad:

In southern German potato salad, the dressing is made from bacon juice and vinegar. In American potato salad, the main dressing is mayonnaise. They are all equally delicious!

Storage Instructions:

  • 2 pound red potatoes diced
  • 1 pound bacon diced
  • 1 Shallot diced
  • 1/4 cup white vinegar
  • 1/4 cup olive oil
  • 2 tablespoon sugar
  • 1 tablespoon dijon mustard
  • 1 teaspoon Salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

  • Bring a large pot of water to a boil. Add the diced potatoes and cook until tender, about 10 to 12 minutes. Drain potatoes and place in a large mixing bowl.

  • Meanwhile, add bacon to cold large skillet. Over medium heat, cook the bacon until crisp, about 8 to 10 minutes. Remove bacon from grease and set aside, leaving grease in pan.

  • Add the red onions to the fat and cook for 5 minutes, until the onions are soft. Add vinegar, olive oil, sugar, mustard, salt, and pepper and stir, 1 to 2 minutes, until heated through.

  • Pour the sauce over the cooked potatoes. Toss with bacon and parsley. Serve warm, or refrigerate for cold serving.
