  • Plain or thick-cut bacon in a one-pot breakfast bake:

This recipe calls for thick cut bacon. It takes a bit longer to cook than regular chopped bacon and is the perfect balance of time it takes to cook hash browns. You want to make sure they cook at the same rate. If you like super crispy bacon, you can try regular cut.

  • Cheese: optional?

The cheese in this recipe is completely optional. We’re total cheese lovers and couldn’t resist some delicious old cheese hash browns. You can also get more creative and add spices like garlic powder, onion powder or paprika to your hash browns.

  • Other add-ons:

If you’re really fancy, you can add some veggies like diced bell peppers and chopped onions. It takes a little extra time, but you can always prepare ahead of time. Diced vegetables like these keep for several days in an airtight container. Adding vegetables to your breakfast is always a good thing.
