Sometimes you just want a big plate of pasta. There’s something comforting about carbs and we’re totally for it! Pasta happens to be one of our favorite carbs (potatoes are a close second). Our Italian Chicken and Pasta features plenty of pasta, tender chicken for added protein, and some delicious veggies. We also made it creamy thanks to the addition of heavy cream and lots of Parmesan. There are many reasons to love this meal. But what is the first reason? It’s all in one pot, which means fewer dishes and less cleanup! WHO No Want that after a long day? It also only takes about 30 minutes to make. Seriously, it doesn’t get much better than this.

What kind of chicken should I use?

We always go for the classic boneless skinless chicken breast. You can easily cut it into bite-sized cubes, and it’s one of the more affordable proteins available. That said, if you have another piece of chicken that cuts evenly, go ahead and use it. Boneless thighs and tenderloin would be our go-to substitutes!

Heavy Cream Substitute:

If you want to make this recipe a little lighter, you can substitute half and half or whole milk for the cream. Just keep in mind that you may end up with a less creamy finish. Another option is to add the cream cheese at the end until melted – start with a few tablespoons and add more until it’s as creamy as you want.

Can I use frozen vegetables instead of fresh?

We wanted this recipe to be as easy to make as possible. If you want to use frozen vegetables instead of fresh, go for it! And that’s half the beauty of this recipe: You can totally use what you have on hand. We recommend that you thaw frozen spinach first and squeeze out any excess liquid.

Vegetable Variations:

Speaking of using what you have on hand, you can also switch up the veggies you use! Our One Pot Chicken Pasta features sun-dried tomatoes, mushrooms and spinach. Add other vegetables as we suggest, or you can get creative and use an entirely different variety. Here are some delicious suggestions:

We finish this chicken and pasta recipe with a sprinkle of healthy Parmesan cheese. You can also add more cheese if you want an extra cheesy pasta dish. These are our favorites:
