We may be in love with chicken thighs. Oh my gosh, we just can’t get enough of it! The night before, we realized there were no plans for dinner. As a food blogger, how the hell does this happen? Well, it happens more often than you might think. That’s when inspiration struck. We browsed the pantry and half-empty fridge for ideas. Luckily we found chicken thighs.

Throw in some orange, coconut milk, and rice and we know we have a dinner on hand. It turned out great. We were worried that the skin would be soggy instead of crispy, but omg it turned out amazing. It’s the perfect combination of gooey and crunchy. oh baby! We served it with a little coconut rice, which added a sweet kick to the chicken’s spicy flavor.

  • How do you make coconut rice side dish?

    Coconut rice is super easy to make. Take 1 1/2 cups of rice, add 1 can of coconut milk (that’s 2 cups) and 1 cup of water. Cover and bring to a boil, reduce heat to a simmer, and continue to cook until all liquid has been absorbed (about 15 minutes).

  • Can I use boneless skinless chicken thighs for orange glazed chicken thighs?

    While you can technically use boneless skinless chicken thighs, it won’t be as juicy or flavorful, and you’ll miss out on that delicious crispy skin. We recommend sticking to the original recipe and using bone-in and skin-on chicken thighs.

    Reheat any leftover chicken thighs in the oven for the best flavor and juiciness. Preheat oven to 350 degrees Fahrenheit and place chicken thighs in a greased baking sheet. Cook until heated through.

Orange Chicken Thighs with Coconut Rice and Fresh Orange Slices

These Orange Chicken Thighs combine oranges, soy sauce, ginger, and more for a mouthwatering dinner.

  • 8 chicken thigh
  • 1 cup Orange juice
  • 1 orange Enthusiastic
  • 1/4 cup rice vinegar
  • 2 tablespoon i am willow
  • 1/3 cup brown sugar
  • 1 teaspoon ginger powder
  • 1/2 teaspoon red pepper flakes


  • Preheat oven to 425 degrees. Spray a 9×13 pan with nonstick cooking spray. If you want to get fancy, layer the bottom of the pan with orange slices (optional).

  • In a small saucepan, combine orange juice, orange zest, rice vinegar, soy sauce, brown sugar, ginger, and red pepper flakes. Bring to a boil, then reduce heat to medium-low and simmer for about 5 minutes.

  • Place chicken thighs, skin side up, in prepared baking dish. Pour half of the glaze over the chicken thighs.

  • Cook in the oven for about 30 minutes. Remove remaining glaze and pour over chicken.

  • Cook for another 15-20 minutes. The skin will get nice and crispy and turn brown.
