I’ve been a little into flank steak lately. The versatility of this cut fuels my experimental curiosity and creativity. This time I decided to give the oven a try. Coat the meat with a simple dry rub, pop in the oven, and out comes a delicious dinner. I love simple meals like this. The meat has a tasty crust and a soft interior. You are also free to cook it to your desired degree of doneness, whether medium or well. And flank steak as always, cut against the grain for God’s sake! Flank steak has a very defined texture, so it’s more important than ever to cut right against it to ensure a tender cut.

Cooking time: 25 to 40 minutes

1 (2-4 lb) flank steak
1 TB.olive oil
1 TB.brown sugar
1TB.Bell Pepper
1 tsp.Salt
1 tsp.five spice powder
1/2 tsp.onion powder
1/2 teaspoon ground cumin
1/2 tsp.nutmeg powder

1. Preheat the oven to 350 degrees.

2. Place flank steak in a 9×13 pan. Wipe it with olive oil.

3. In a small bowl, combine brown sugar, paprika, salt, allspice, onion powder, cumin, and nutmeg. Sprinkle spices over flank steak and rub.

4. Cover the baking tray with aluminum foil and bake in the preheated oven for 25 to 40 minutes (depending on doneness). For medium rare, the internal temperature is 130-135 degrees. Well done is 155.

5. Remove from the oven and let rest for 5 to 10 minutes before slicing and serving.
