How to Reheat Fried Zucchini:

Fried zucchini is best freshly fried, but it can be reheated if overcooked. I recommend reheating in a 375°F oven for 5-7 minutes. You can also roast them on low heat for about 3 minutes.

Can I use yellow squash instead of zucchini?

Yep, the only real difference between zucchini and zucchini is color, and yellow zucchini is just a tad sweeter than zucchini.

Can I make fried zucchini in the air fryer?

These can be air fried if you want to avoid oil. Prepare as usual and place in the air fryer in a single layer. Coat with cooking spray and cook at 400°F for 10 minutes or until crisp and golden.

Can I make fried zucchini in the oven?

Instead of frying, you can also make this fried zucchini in the oven, although it’s not technically fried. Spray the breaded zucchini with cooking spray and spread out in an even layer on a baking sheet. Bake in a 400 degree oven for 10-15 minutes, turning halfway through.

  • 2-3 big zucchini
  • 1 cup cheese
  • 2 big Egg
  • 1 cup all purpose flour
  • 1 cup plain dry bread crumbs
  • 1/2 cup freshly grated parmesan cheese
  • 1 teaspoon italian seasoning
  • 1/2 teaspoon garlic powder Elective
  • 1 quart vegetable oil for frying


  • Pour enough vegetable oil into a large heavy skillet to cover 3/4 inch of oil. Heat to 350°F.

  • Rinse zucchini and pat dry. Slice zucchini into 1/4-inch thick slices, removing ends.

  • Dredge the flour in a shallow dish. Pour the buttermilk into another shallow dish, add the eggs and beat well. In a third shallow dish, stir together breadcrumbs, Parmesan, Italian seasoning, and garlic powder (if using).

  • Coat zucchini slices with flour, then dip into buttermilk mixture, then roll into breadcrumb mixture.

  • Working in small batches, fry the zucchini in the oil for 3 minutes, or until golden brown. Remove zucchini from oil with a slotted metal spoon, then transfer to a plate lined with paper towels to drain.

  • Serve hot.
