Pomodoro in Italian means tomato. Here’s an easy tomato pasta dish that’s a classic Italian comfort food dish. Don’t let its simplicity fool you, it’s packed with flavor too. It’s a quick red sauce that still retains a lot of fresh flavor without the heavy feel of a marinara or bolognese. It’s what we crave when we’re looking for a super garden-fresh meal.

Use San Marzano-style tomatoes in this recipe for best results. This means the tomatoes came from a very specific region of Italy, or if labeled a “style”, from the same type of tomato. Usually canned tomatoes are of the Roma variety. San Marzano tomatoes are known for their more intense tomato flavor and are slightly sweeter.

If you want to use fresh tomatoes in this recipe, you will need to peel them. To do this, simply blanch them in boiling water for 1 to 2 minutes, then immediately submerge them in ice water. The peel should come off easily.

  • 1 28 oz cans peeled whole tomatoes
  • 3 tablespoon Extra virgin olive oil
  • 1 white onion fine cut
  • 5 clove garlic minced
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon Salt
  • 1 pound Fettuccine
  • 2 tablespoon butter
  • 1/4 cup Freshly grated Parmesan cheese
  • 2 tablespoon chopped fresh basil

  • Place the tomatoes in a blender or food processor and puree until smooth. on hold.

  • Heat olive oil in a large skillet over medium-high heat. Add onion and sauté 5 to 7 minutes until softened. Add garlic and red pepper flakes and sauté 1 minute more.

  • Pour in tomato puree, season with salt and bring to a simmer. Simmer for 10 minutes.

  • Meanwhile, cook pasta according to package directions in boiling salted water, drain.

  • Add the pasta to the sauce and toss to coat. Add butter and Parmesan and stir until butter melts.

  • Sprinkle with basil while hot.
