I’ve been buying CSA boxes for years. I think it was 6 years ago when I got my first box. If you’re not familiar with CSA, it stands for Community Supported Agriculture. Basically, you bond with a group of farmers, and their fresh produce is delivered to you. it’s great. Not only have I experienced some amazing produce over the years, I’ve also been exposed to new and interesting ingredients.

Pea sprouts are one of the ingredients I learned about through the CSA box. They are actually vegetables grown from peas. They even taste a bit like peas. You can fry them and use them in all sorts of Asian cuisines, but one of my favorite ways to eat them is as a simple salad. I love being able to taste the peas, and even adding some frozen peas for that wonderful pea flavor. Here’s a simple salad that’s different and intriguing. It’s delicious, refreshing, and perfect for spring or summer salads.

  • 1/2 teaspoon lemon peel
  • 1 tablespoon fresh squeezed lemon juice
  • 1 clove garlic broken
  • 1 teaspoon white wine vinegar
  • 1/2 teaspoon sugar
  • 1/4 cup Extra virgin olive oil
  • 6 cup pea sprouts
  • 1/2 cup frozen peas thawed
  • 1/4 cup shredded parmesan cheese
  • freshly ground salt
  • freshly ground pepper

instruct

  • Make the dressing by combining lemon zest, lemon juice, crushed garlic, vinegar, sugar, and olive oil in a small bowl. Stir together.

  • In a large salad bowl, toss together the pea shoots and frozen peas. Sprinkle the salad with shredded Parmesan and season with salt and pepper.

  • Pour the dressing over the salad, then toss before serving.
