  • Buttermilk Substitute:

    No buttermilk? no problem! Add 1 tablespoon of white vinegar or lemon juice to 1 cup of milk for a homemade buttermilk substitute. You can halve or double this recipe as needed and use it in any recipe that calls for buttermilk! For this recipe, you need to use 3/4 tablespoon of vinegar or lemon juice for 3/4 cup of milk.

    Absolutely! You can make your own buttermilk substitute with soy or almond milk, and substitute your favorite full-fat, plant-based yogurt for Greek yogurt.

  • 2 cup all purpose flour
  • 2/3 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon Salt
  • 1/4 cup Plain Greek Yogurt
  • 3/4 cup cheese
  • 2 Egg
  • 1 cup Creamy Peanut Butter
  • 2 teaspoon vanilla extract
  • 12 spoonful of peanut butter

instruct

  • Preheat oven to 350 degrees. Spray muffin pans with nonstick cooking spray, or line muffin liners.

  • Combine flour, brown sugar, baking powder, baking soda, and salt in a bowl. Stir.

  • Stir in yogurt, buttermilk, eggs, peanut butter, and vanilla. Stir until everything is combined.

  • Divide thick batter between 12 muffin dots. They will be about 2/3 full.

  • Top each with 1 tablespoon of peanut butter. Swirl the peanut butter around with a toothpick. Make sure you do this all the way to the bottom so you have peanut butter all over.

  • Bake in preheated oven for about 18-20 minutes.
