Penne Rosa is a creamy tomato pasta dish that’s delicious! This 15-minute meal is sure to please!

Noodles and Company makes a delicious macaroni they call Penne Rosa. This is first bite love and we knew it would be super easy to make at home. The added bonus is that at home you can add more restaurants are always a good thing to leave out to cut costs. That’s right, this recipe is even better than Noodles and Co. Even better, this pasta can be prepared in just 15 minutes, making it a weeknight staple. It’s packed with fresh ingredients like tomatoes, mushrooms, and spinach, so you can eat veggies, too. It’s a complete meal. You can add some chicken if you like, but this is our favorite meatless meal. Welcome to one of our family favorites!

Penne Rosa Pasta Choices:

We love this pasta recipe, but you can really use any pasta. Macaroni, macaroni, elbows, and shells are all good choices.

mushroom:

We know many of you have strong opinions about mushrooms. While you can technically make this dish without the mushrooms, we find they add so much to the dish and we highly recommend them!

Spice Grade:

There was a pleasant bit of heat to the dish, but not overly so. If you’re especially sensitive to spices, keep 1/4 teaspoon of red pepper flakes. If you like spice, go ahead and use the 1/2 teaspoon of red pepper flakes, or even add more!

Heavy Cream Substitute:

The heavy cream gives the pasta the perfect creaminess. You can use half and half if you want a lighter side for this dish.

Storage and Reheating Instructions:

Store any leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in a skillet on the stove over medium-low heat until heated through.

  • 1 tablespoon olive oil
  • 8 ounce sliced ​​mushrooms
  • 2 clove garlic broken
  • 1 1/2 cup Marinara
  • 1/4 to 1/2 teaspoon crushed red pepper flakes
  • 4 roma tomatoes diced
  • 3 cup fresh spinach leaves
  • 1/2 cup heavy cream
  • salt and pepper to try
  • 1/2 cup Shredded Parmesan Cheese

  • Cook pasta according to package directions.

  • Meanwhile, heat olive oil in a large skillet over medium-high heat. Add sliced ​​mushrooms and sauté 3 minutes, until mushrooms soften.

  • Add crushed garlic and heat for 1 minute.

  • Add cooked pasta, marinara sauce, and crushed red pepper flakes.

  • Pour in tomatoes and spinach. Stir to combine. Add the heavy cream.

  • Sprinkle with Parmesan cheese while hot.
