These Peppermint Joe’s are even better than Trader Joe’s! They are thin peppermint chocolate chip cookies filled with peppermint buttercream and covered with rich dark chocolate. This is a cookie dream!

Has anyone else purchased from Trader Joe’s such a large quantity of Mint Joe’s that you’ve caught the eye of other shoppers? They are only on sale for a short time during the holidays and always sell out fast! Even though we have a huge stockpile, they don’t last long in our house, leaving us without these delicious cookies for the vast majority of the year! We knew we needed to perfect the copycat recipe and it was a labor of love.

Peppermint Chocolate Jojo Copycat:

We highly recommend using high-quality chocolate chips to ensure the best flavor and texture when melted. A couple of our favorites are Guittard and Ghirardelli, which should be available at your local grocery store.

Peppermint Extract:

Using peppermint extract in cookies, fillings, and chocolate coatings really gives these cookies the mint flavor they need to truly be a Peppermint Joe Joe copycat. You should be able to find peppermint extract in the baking section of your local grocery store, or you can buy it from Amazon or other online retailers.

Crushed candy canes:

To crush my candy canes, I simply place them in a resealable plastic bag and hit them with my rolling pin until they are completely crushed. That’s a daunting task for any helpers that might join your kitchen.

Tips for Assembling the Cookies:

When you flatten the cookies and cream together, be sure to press lightly. If you press too hard or are too rough with them, they will shatter into pieces.

Storage Instructions:

Store your cookies in an airtight container at room temperature for up to 5 days.

raw material

Peppermint Chocolate Chip Cookies

  • 1/2 cup salted butter soften
  • 1 cup granulated sugar
  • 1 big egg
  • 1/2 teaspoon peppermint extract
  • 1 1/4 cup all purpose flour
  • 1/2 cup cocoa powder
  • 1/4 teaspoon Salt

  • 1/2 cup salted butter soften
  • 1/4 cup vegetable shortening
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 3-4 cup powdered sugar
  • 2 Peppermint Cane broken

chocolate coating

  • 4 cup semisweet chocolate chips
  • 1/2 teaspoon peppermint extract
  • 4 Peppermint Cane broken


Peppermint Chocolate Chip Cookies

  • In a large mixing bowl, using a hand mixer, cream butter and sugar until light and fluffy.

  • Add eggs and peppermint extract and beat until smooth. Add the flour, cocoa powder, and salt and beat until just combined.

  • Roll out dough into a long log 2 inches in diameter. Wrap in plastic wrap and refrigerate for 30 minutes to 1 hour, until firm.

  • Preheat oven to 350°F. Using a sharp knife, slice the cookies into thin slices, about 80 pieces.

  • Place the cut cookies on a baking sheet lined with parchment paper. Bake in batches for 10 minutes.

  • Slide parchment with cookies onto a wire cooling rack to cool completely. The cookies will firm up as they cool.

  • In a medium mixing bowl, using a hand mixer, combine the butter, shortening, vanilla extract, and mint extract.

  • Slowly add powdered sugar, 1/2 cup at a time. The filling should be thick.

  • Stir in the crushed candy canes. Form into teaspoon-sized balls and flatten by lightly pressing with your fingers.

  • Place the flattened filling between two cooled chocolate chip cookies and press lightly together to form a sandwich cookie.

  • Pour the chocolate chips into a microwave-safe bowl. Melt for 15 seconds at a time, stirring in between, until the chocolate is completely melted and smooth. Add peppermint extract.

  • Dip the sandwiched cookies in the chocolate with a fork and place on a wax paper or parchment lined tray. Sprinkle crushed candy canes over the top.

  • Repeat with remaining sandwich cookies. Place the biscuits in the refrigerator to harden completely.
