They’re also great to serve at luncheons and baby showers/bridal showers. They’re easy to throw together and require making ahead, so they’re perfect party and picnic food. This particular sandwich is bursting with flavor. I used walnut pesto because I like the flavor and slight crunch of walnuts rather than the more traditional pine nuts. Sun-dried tomatoes lend a delicate touch, while pepper brings a bit of zing.

Can I change the ingredients?

Absolutely! Feel free to adjust the toppings to your own personal taste preferences and omit items you may not like. As written, this recipe offers a lot of strong, punchy flavors combined.

How to press a sandwich?

This recipe uses focaccia. We found that focaccia had the perfect texture for making pressed sandwiches. If you can’t find focaccia to buy, you can make your own using our recipe, or you can use a similar bread, such as ciabatta.

  • 2 cup fresh basil leaves bulk
  • 3 clove garlic
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup olive oil
  • 1/4 cup pine nuts

  • 1 large loaf or 2 small loaves of focaccia
  • 1 pound Deli Chicken Breast Fillet
  • 1/2 pound Deli Salami Slices
  • 1/4 cup sun dried tomatoes
  • 1/4 cup sliced ​​olives
  • 1/4 cup pepper
  • 2 Roasted Red Bell Peppers roughly chopped
  • 16 ounce. fresh mozzarella cheese slice

  • Combine the basil, garlic, Parmesan cheese, olive oil, and walnuts in a food processor or blender to make pesto. Blend until fairly smooth.

  • Carefully cut the focaccia hearts in half. Spread the pesto over the top half and set aside.

  • Slice the chicken breast and salami on the bottom half.

  • In a small bowl combine the sun-dried tomatoes, olives, pepperoni, and roasted red bell pepper. Sprinkle over the meat layer.

  • Top with a few slices of fresh mozzarella to cover the entire sandwich.

  • Spread the pesto over the top half of the focaccia and place on the sandwich. Wrap tightly in plastic wrap.

  • Place wrapped sandwiches on a baking sheet. Place another baking sheet on top of the sandwiches. Place two heavy books or a heavy object on the top baking sheet to flatten the sandwich. Put the books and all items in the refrigerator for 12 hours.

  • After 12 hours have passed, unwrap the sandwiches and cut into squares to serve. Wrap in waxed paper and twine for a lovely display.
