This quick and easy lemon chicken recipe requires only a handful of ingredients, but don’t be fooled by the simplicity — it’s delicious!

This recipe is super easy to make and absolutely delicious. This is one of those quick and easy weeknight meals you’ll want to keep forever because, miraculously, even picky eaters will love it! All you have to do is choose a few simple side dishes to go with it, and you’re good to go. Meals like these are food we grew up with and we still love it as much as we did decades ago. If you’re tired of fighting with your kids to finish dinner, this is the recipe for you. As a bonus, you’ll love it too!

Do I have to marinate in a plastic bag?

No, you can always marinate in a shallow dish. Simply whisk the marinade in a mixing bowl, place the chicken in, and pour the marinade over the top.

Can this recipe be used with chicken thighs?

Yes it can! You can use bone-in chicken thighs in this recipe, or boneless, skinless chicken thighs. Cooking time will vary slightly, depending on the size and thickness of the thighs. When using the skin on, be sure to cook directly on the hot pan to bring out the skin. This will help crisp it up. Cook skin side down first, then flip to finish.

Can I add vegetables to the skillet?

The same seasoning works for the veggies, so you can make a complete dinner in one skillet. Be sure to make a separate batch of vegetable marinade to avoid cross-contamination.

  • green beans
  • asparagus

  • 4 Boneless Skinless Chicken Breasts
  • 2 lemon Juiced (1/2 cup)
  • 2 tablespoon Extra virgin olive oil
  • 2 teaspoon lemon pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ¼ teaspoon Salt

  • Place the chicken breasts in a gallon-sized resealable plastic bag. Pour in lemon juice, olive oil, lemon pepper, basil, oregano, and salt. Shake slightly so all the chicken is covered.

  • Marinate in the refrigerator for 30 minutes or up to 8 hours.

  • Heat a heavy skillet over medium-high heat.

  • Remove the chicken from the marinade and place directly into the hot skillet. Discard any remaining marinade.

  • Cook chicken 6 to 7 minutes per side, turning halfway through. Continue cooking until the internal temperature of the chicken reaches 165°F.

  • Serve hot. Garnish with fresh chopped parsley and lemon slices (optional).
