Quick Bacon and Pea Pasta (Eggless Spaghetti Carbonara)

Home » Quick Bacon and Pea Pasta (Eggless Spaghetti Carbonara)

After the great experiment with egg whites, I’m getting a bit tired of eggs. However I had planned to make spaghetti carbonara. Yep, that won’t happen. Instead, I created an eggless version for my quick pasta needs. To be honest, I prefer it without the eggs. This is a great weeknight meal, and school moms and dads need some in their back pockets as back-to-school looms. This is a delicious dish to be devoured by all!

Funny story, when I was doing this, my soon-to-be 1st grader was watching and proclaiming, “Bacon is my favorite candy. Next comes marshmallows. That stuff is good too.” That’s one for me Proud moment. My son loves bacon. This sentence made his sister finally try bacon for the first time. I swear my daughter is vegan. Now that she’s discovered candy bacon, maybe not anymore.

Spin a bite of Quick Bacon and Pea Spaghetti (Eggless Spaghetti Carbonara), topped with crispy bacon and peas

raw material

  • 1 pound bacon diced
  • 1 pound Spaghetti
  • 1 to 2 cup frozen peas
  • 3 tablespoon butter
  • 2 clove garlic minced
  • 1/2 teaspoon Salt
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese

  • Place the sliced bacon in a cold skillet over medium-high heat. Cook bacon, stirring occasionally, until crisp, about 10 minutes. Remove bacon cubes from pan and grease, and drain on a paper towel-lined plate.

  • Meanwhile, cook pasta according to package directions.

  • Remove most of the bacon grease from the skillet, leaving about 1 TB in the pan. Reheat the pan and add the frozen peas and butter. Allow peas to heat and thaw, about 3 to 5 minutes. When the peas are thawed, add the garlic and fry for 1 minute.

  • Add salt and heavy cream. Pour the cooked spaghetti into the skillet and toss to coat. Stir in Parmesan cheese.

  • Served hot with crispy bacon.

***NOTE: I kept the bacon separate to keep it crisp. If you toss it with wet ingredients, they will start soaking in the liquid. I love my bacon crisps and I love the added crunch.
