This is my favorite salad. I’ve made it several times over the past few weeks and have been devoured every time. It’s a meal in itself, or you can serve it as a very hearty side dish. I’ve even taken it to a potluck and it’s a nice touch. I love that it’s hearty yet still so light and crisp and cold. It makes me feel like I’m eating well but still keeps me feeling full. Feel free to use rotisserie chicken or leftover chicken breasts. I’m doing this because I’ve been woefully short on time lately. I did make my own dressing because it only takes 2 minutes, but you can always use bottled Italian dressing if you don’t have enough ingredients. soon. It’s easy. It’s healthy. It is filling. yield: Serves 4 to 6

raw material

1 pound cheese dumplings
2 cups cooked chicken pieces (use rotisserie chicken if desired!)
1 head lettuce, chopped
1 red bell pepper, seeded and chopped
1 cucumber, peeled and diced

1/4 cup extra virgin olive oil

1/4 cup red wine vinegar

2 cloves of garlic, crushed

1 tablespoon Dijon mustard

1 tsp sugar

1 teaspoon dried basil

1/2 tsp salt

1/2 tsp pepper

1/2 cup shaved Parmesan


1. Cook the cheese ravioli according to package directions.

2. Meanwhile, toss chicken, lettuce, bell pepper, and cucumber to combine.

3. In a small mixing bowl, whisk together the olive oil, red wine vinegar, garlic, Dijon, sugar, basil, salt, and pepper.

4. Rinse the cooked tortellini with cold water. Drain well. Toss with salad.

5. Serve with mayonnaise, Parmesan, and extra salt and pepper.
