Courtney here, from Know Your Products! Today we share this healthy and fresh salad, hope you like it! This recipe is so easy to make, you may even have all the ingredients ready at home already! It’s somewhere between a Mediterranean quinoa salad and a Greek quinoa salad. You could definitely add some fresh olives to this salad, our daughter is very picky about olives so we left them out. If you don’t like chickpeas, you can omit the chickpeas and add black beans to make this a black bean quinoa salad.

how to cook Quinoa

You can usually follow the directions on the package of your favorite quinoa. Start by measuring the amount of quinoa you need. 1 cup of dry quinoa makes 3 cups of cooked quinoa. Put the desired amount of quinoa in a strainer and rinse with cold water. After you’ve rinsed the quinoa completely, you can add it to the pan you want to use. Sprinkle the quinoa with a pinch of salt and pour it into the water. For every 1 cup of dry quinoa, you need to add 2 cups of water. After adding the water, cover the quinoa and bring the quinoa to a boil. Once the water boils, you need to reduce the heat to low, cover and cook for 15 minutes.

How Long Does Cooked Quinoa Last?

We usually use up all the cooked quinoa within 2-3 days. If you’re cooking up a big batch that you can’t finish, you can freeze the quinoa for later.

For this recipe, you will need to use cold, already cooked quinoa. That’s what makes this recipe so easy and perfect for leftovers! Then you’ll chop up some peppers. We like to use a variety of peppers each week and chop up a colorful blend so we can easily add to recipes like this. Cucumbers are also something we chop up this week. It makes snacking and preparing recipes a lot easier when you prep ahead of time. Some fresh lemon juice, olive oil, feta cheese, and salt complete this quinoa salad.
