These homemade sweet cookies are super easy to make and ready to pour, rather than rolled up and cut for added convenience. The berries are sweetened with sugar and flavored with the tartness of lemon juice and zest, which lends a delicate touch to the dessert. And, of course, you can’t beat fresh whipped cream. Yum!

I serve mine in a glass jar, which looks very trendy, but you can always serve it on a plate. This dessert keeps well in the refrigerator, so you can make it ahead of time and it’s easy to plate after dinner. Since I’m fine and like to keep my recipes handy, I’ve made it so that 1 pint of heavy cream you buy is used up. 1 pint equals 2 cups. Seriously, don’t you hate it when you’re left with extra money? Usually I use 3/4 cup half and half for my sugar cookies. You can make it, if you have it, but you can do it with just milk and heavy cream. Regardless, I hope you enjoy this patriotic treat!

Sweet Cookie Shortbread

  • 2 cup all purpose flour
  • 3/4 cup powdered sugar
  • 1 tablespoon baking powder
  • 1 teaspoon Salt
  • 4 tablespoon cold butter
  • 1/2 cup milk
  • 1/4 cup heavy cream

  • 2 pint strawberry Shelled and Sliced
  • 12 ounce blueberry
  • 1 lemon zest and juice
  • 1/4 cup sugar

fresh cream

  • 1 3/4 cup heavy cream
  • 2 tablespoon sugar

  • Preheat oven to 400 degrees. Line a baking sheet with parchment paper.

  • In a medium mixing bowl, whisk together the flour, powdered sugar, baking powder, and salt. Cut cold butter with a pastry cutter until mixture resembles cornmeal. Stir in milk and heavy cream until a thick dough forms.

  • Use a dinner spoon to scoop scoops of dough onto prepared parchment-lined baking sheets, leaving about 2 inches between each dough.

  • Bake in the preheated oven for about 15 minutes, until the tops start to turn golden brown. Remove from oven and cool completely on a wire rack.

  • Meanwhile, either place the berries in a bowl and toss with the lemon zest, lemon juice, and 1/4 cup sugar, or separate the berries and distribute the lemon zest, lemon juice, and sugar to the different berries.

  • Whip the heavy cream with 2 TB. Using a hand or stand mixer add sugar until cream forms stiff peaks.

  • Serve in a mason jar or glass with cookies and cream on the bottom, then berries, and repeat until jar or glass is full. Alternatively, you can serve a biscuit on a plate, topped with fresh cream and berries.
