Delicious Roasted Vegetables slathered in buttery brown sugar is one of my favorite fall and winter side dishes. This recipe only calls for a few ingredients, but sometimes all you really need is to let the veggies shine. Roasted vegetables give off a wonderful caramel flavor, and this dish is sure to be a shining star at the dinner table.

1 pound Brussels sprouts, trimmed and halved
6 large carrots, peeled and cut into 1/2-inch pieces
salt and pepper
1/4 cup butter, melted
1/4 cup brown sugar

1. Preheat the oven to 400 degrees. Lightly grease a baking sheet.
2. Arrange the halved Brussels sprouts on a baking sheet and toss with the carrot cubes. Season with salt and pepper.
3. Stir together the melted butter and brown sugar. Pour over Brussels sprouts and carrots.
4. Bake in a preheated oven for about 30 to 35 minutes until soft. Actual baking time will depend on the size of the Brussels sprouts and carrot cubes.
