We kicked off with a Cajun turkey breast. Sometimes you don’t need or want a whole turkey for Thanksgiving, and that’s totally okay. Turkey breast is easy to make and takes a lot less time.

Why can’t you give me an exact cooking time? I know, I know, there’s nothing more frustrating than not knowing when it’s going to be done making a big meal like Thanksgiving. Here’s the thing, when it comes to cooking meat, especially poultry, especially one that tends to dry out like turkey breast…it’s all about temperature, not time.

There are a variety of factors that can affect the actual cooking time of a turkey breast. These factors include the exact size of the turkey breast, the shape of the turkey breast, the actual temperature of the oven (yes, not all ovens are accurate), how many times you open the oven door, where you place the turkey breast in the oven, and more . With all of these factors in mind, can you see why using a meat thermometer is the best choice?

Turkey Breast Slices with Cranberry Sauce

  • 2 teaspoon chili
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon basil
