I may have a sweet tooth, but I just love a savory breakfast. Start the day with something hearty. These muffins are loaded with bacon and bacon dip, and topped with delicious melted cheddar cheese throughout. Bacon really makes everything better, and this muffin is no exception.

good news! These muffins can be frozen too! Simply freeze and store in a resealable plastic bag. When you want a delicious breakfast, just pop in the microwave for about 20 seconds to defrost.

You can also use this basic muffin recipe to try your own delicious twists. Try sausage and rosemary, or ham and pineapple. The combinations are truly endless!

You’ve probably heard of a bacon craze or two (or a lot!), and bacon can be used in just about everything. I’m not a bacon fanatic myself, but I do appreciate the deliciousness of bacon. In the US, bacon comes from pork belly.

Bacon fat is a delicious and versatile condiment. The recipe above adds bacon fat to the product, but this is rare, especially if you’re only preparing strips of bacon to eat plain. Bacon fat can be stored in a small jar in the refrigerator and will keep for about a month. Add a tablespoon to baked potatoes. Throw it in some cornbread. Fry cabbage in it. Cook eggs in it. Add it to salad dressings. Sneak it into your hamburger. Add a little to vegetables like green beans, corn, or Brussels sprouts. There are many ways to use it, so don’t waste it!

  • 1 pound bacon
  • 1/3 cup Bacon Drops
  • 1 big egg
  • 3/4 cup milk
  • 1 3/4 cup all purpose flour
  • 1/4 cup brown sugar
  • 1 tablespoon baking powder
  • 2 cup shredded cheddar cheese


  • Spread the bacon evenly on the baking sheet. Place the baking sheet in the cold oven. Set the temperature to 400 degrees and set the timer for 20 minutes. After 20 minutes, check the bacon and remove when crisp. Transfer to a plate lined with paper towels to drain. Reserve drippings and measure out 1/3 cup. Once the bacon is cool, crumble it up.

  • In a medium mixing bowl, combine eggs, milk, flour, sugar, baking powder, and bacon paste. Stir until combined. There will still be some lumps. Add bacon and cheese and toss to combine.

  • Divide batter among lightly greased muffin tins. Bake at 400 degrees for about 15 minutes, until golden brown. Remove from pan to cool or serve warm.
