  • 2/3 cup all purpose flour
  • 1 cup milk


  • 1 cup sour cream
  • 8 ounce. mushroom slice

  • 1/4 cup chopped celery
  • 2 cup diced cooked chicken
  • 1 cup shredded cheddar cheese Divided into


  • Make the crepe batter by placing the eggs, salt, flour, and milk in a blender. Blend until smooth.

  • Heat a nonstick skillet over medium heat. Lightly grease a pan. Pour a little of the crepe batter into the pan and swirl to coat the bottom of the pan. Cook for about 1 minute, until the surface loses its luster. Carefully flip over. (see demo video). Repeat until all batter is used.

  • Preheat oven to 400 degrees. Lightly grease a 9×13 pan.

  • Make the filling by placing the sour cream, mushrooms, olives, shallots, celery, chicken, and half of the cheddar cheese in a mixing bowl. Place a scoop in the center of each crepe. Fold the ends and sides over and place into the prepared pan.

  • Bake at 400° for 20 minutes. Remove from oven and sprinkle with 1 cup grated cheese. Bake for another 10 minutes, until the cheese is melted.
