As a busy mom, all I want is a quick weeknight meal, and I know many of my followers feel the same way. When I was a new mom, I was always overwhelmed with little ones on my feet, and as my kids got older, I found myself busy in new ways. A good sheet pan dinner is just what the doctor ordered!
This one sheet pan dinner is perfect for my family. It’s delicious, filling, nutritious and makes me feel like a good mom. It’s easy to throw everything together and pop in the oven while you’re dealing with other things like helping the kids with homework or vacuuming, or just finding a moment of quiet to recover your sanity. You never seem to have enough time, do you?

I like to add a little extra Parmesan at the end of this recipe, after it’s done baking and the chicken is cooked through. Then I just put it under the broiler for a few minutes to let it thaw and brown the chicken a bit.
If this feels like too much effort, I don’t blame you. You can serve it exactly as written, but I added this as a note to the recipe for moms who need extra cheese. I am one of those moms.

- 4 chicken breast
- 1 lemon zest and juice
- 1 teaspoon Salt Divided into
- 1 teaspoon lemon pepper
- 1 pound sweet potato stationed
- 2 cup broccoli
- 3 tablespoon butter melted
- 3 tablespoon olive oil
- 5 clove garlic broken
- 1/2 cup Freshly grated Parmesan cheese
- 1/4 teaspoon Black pepper

Preheat oven to 375 degrees. Lightly grease a baking sheet.

Place chicken breasts on a baking sheet. Drizzle with lemon juice and season with 1/2 teaspoon salt and lemon pepper.

In a large mixing bowl, add potatoes and broccoli florets. Stir in butter, olive oil, garlic, Parmesan, 1/2 teaspoon salt, and 1/4 teaspoon ground black pepper until evenly coated.

Spread the potatoes and broccoli evenly on the pan, surrounding the chicken.

Bake in the preheated oven for 35-40 minutes, until the chicken reaches an internal temperature of 165°F and the potatoes and broccoli are tender when forked.

Garnish with lemon zest and fresh chopped parsley (optional).

You can also sprinkle a tablespoon of Parmesan on each chicken breast if you want more cheesiness. Place it under the broiler for 2-3 minutes to give the cheese a chance to brown slightly.
