Last week was one of crazy busy ones for me. I am scheduled every day from morning to bedtime. exhausted! I barely have time to eat foods that are miserable for me. My time in the kitchen is my happy time. It relieves my stress and is my creative outlet. I think I still do a lot of cooking this week, but cooking isn’t fun and nothing new, which means my creativity is exploding! Keep an eye out for some fun recipes as I get my hands back in the kitchen!
So on one crazy night where I literally had 15 minutes to get the food on the table, I pulled out some pre-made ravioli, cooked them (which took, what, 3 minutes?), and made a browned butter garlic sauce. The longest part was waiting for the water to boil to cook my ravioli, so the whole process was done in less than 10 minutes. Great sauce! It gave me 5 minutes to snap some quick photos and wa-la! I was eating and then stepped back out the door. I know I’m a bit of a “rags to riches” snob, but there are a few things I feel are fine buying pre-made. Wontons are one of them. Damn, the kind I use is so good! You can also make your own and freeze them. All I know is that when I only have 15 minutes, I can still make something better than a drive-thru.
