Even in midsummer, you can still see us enjoying the bowl of delicious soup with relish while we are sweating profusely. In the United States, the terms “sweet potato” and “yam” are used interchangeably to refer to potatoes with a red skin and orange flesh. However, you may see something else at the grocery store labeled sweet potatoes with yellowish skins, while your orange-fleshed variety is labeled yams. Guess what? Both are sweet potatoes!
Those sweet potatoes you think are yams are actually black-skinned sweet potatoes. You won’t often come across real yams in American grocery stores. True yams have brown or black skins and red, purple, or off-white flesh. Are you crazy? You thought you’d been eating yams all these years!

Sweet potatoes grow naturally in all shapes and sizes. We found that it takes about 3 large sweet potatoes to weigh 2 pounds, or 6 medium to small sweet potatoes. It’s best to use a scale at the grocery store to weigh ingredients like sweet potatoes and potatoes.
Blenders vs Immersion Blenders:
We’re big fans of immersion blenders. Rather than dealing with hot liquids to put in a blender and inevitably overflow, why not just blend them in the pot? It has drastically reduced our cleanup time. If you don’t have an immersion blender, you can always carefully pour the soup into a blender fitted with a vented lid.
