Slow Cooker Citrus Lamb Shanks

Home ยป Slow Cooker Citrus Lamb Shanks

I came across a recipe online for citrus braised lamb shanks interest. I decided I really wanted to turn this into a slow cooker recipe. The slow cooker is an excellent choice for anything that involves traditional braised meat. The original recipe called for a lot of wine, which I don’t usually do (I cook for my family, which includes 2 small children!). And since alcohol definitely doesn’t burn off in the slow cooker, I changed things around to make it tasty and family friendly. I like to cook leg of lamb in the slow cooker. It turns lamb into an easy meal. I love how the smell fills my house and the meat is so tender off the bone. A delicious treat for citrus season!

raw material

2 tbsp olive oil
4 lamb shanks (about 1 pound each)
2 carrots, chopped
1 sweet onion, chopped

1 cup vegetable broth
1 lemon, peeled and juiced
1 lime, peeled and juiced
1 navy orange, peeled and juiced
1 tsp salt

1. Heat the olive oil in a large skillet over high heat. Brown the shanks on all sides, 7-10 minutes.Remove from skillet and place directly in slow cooker.

2. In a medium mixing bowl, whisk together carrots, onion, celery, garlic, tomato paste, vegetable stock, lemon zest and juice, lime zest and juice, orange zest and juice, and salt. Pour the lamb shanks into the slow cooker.
